At first, I couldn’t see the mashed potatoes until I noticed them peeking out from under the steak. When Daniel Boone’s great-grandson Seth Hays first moved to the Council Grove area, it was already heavily populated by those traveling along the busy Santa Fe Trail. Soon after moving, he decided to start a trading post and restaurant business to serve both locals and travelers, and in-turn built a log cabin to house his enterprise. The building was finished in 1857 and soon became a popular spot to buy not only necessities and a good meal, but to also collect mail, hold court hearings, see a show, drink moonshine and go to church. In 1886, a fire ravished most of Council Grove’s Main Street; however, Hays House was saved by the locals who had come to view the establishment as their second home. Today, the main bar remains on the second floor while the original tavern bar sits in the cellar space that is rented for special events.

Thankfully, he is also the artist that creates the often raved about desserts — a true “can’t miss” course for any Hays House diner. Hays House's history and legend is as abundant as the food. It's reported that Jesse James and George Armstrong Custer are just a couple of the restaurant's notable diners. In its 158-years Hays House Restaurant has been restored three times, each after suffering a fire. Only the charred beams in the Seth Room, purposely left exposed, share the restaurants story of rising from the ashes.

The exterior of the historic restaurantwas significant redone with a new look in 2015. He has spent his career creating new spins on traditional cuisine. As a lifelong Kansas resident, Chef Randy has developed and perfected the flavors of prairie life. Using time-tested techniques and the highest quality, local food he can get, Randy is the driving force behind the soulful Hays House menu.
Before sitting down to enjoy options like homemade pies and the favorite fried chicken, guests are encouraged to try any of the beers and wine available as well as classic cocktails like a Rusty Nail or a gin and tonic. Opened as a restaurant and trading post by Seth Hays—Daniel Boone’s great-grandson—Hays House also let rooms that served as a barber shop and a U.S. post office. On some occasions, the space was converted for religious services or theatrical performances. We had chicken fried steak ($15 with choice of potatoand a side) and prime rib ($28 for the smaller 12 ounce cut with potatoand a side). The chicken fried steak was hand breaded, with much more meatthan breading. The coating was crisp and delicious, and the steak was tenderand beefy flavored.
Once seated, I perused the menu - created by Hay House’s executive chef Randall Dickson. Second happy note, Hay House sources their steaks (beef and bison) from local Flint Hills ranchers. Hays House 1857 Restaurant and Tavern founder, Seth Hays, is considered the founder of Council Grove, KS.
